Ingredients

boneless, skinless chicken breasts or thighs

coconut milk

fresh lime juice

garlic

ginger

fish sauce

brown sugar

red pepper flakes

Optional: fresh cilantro or Thai basil, soy sauce, honey, lemongrass, kaffir lime leaves

Instructions

1. Cut chicken into bite-sized pieces.

2. Mix coconut milk, lime juice, garlic, ginger, fish sauce, brown sugar, and red pepper flakes in a bowl.

3. Toss chicken in the marinade, ensuring each piece is well-coated.

4. Marinate in the fridge for at least two hours, or overnight.

5. Thread chicken onto skewers.

6. Preheat grill to medium-high heat.

7. Grill skewers, turning occasionally, until cooked through and charred, about 10-12 minutes.

Notes

For an extra punch, add a splash of soy sauce or a sprinkle of lemongrass.

If you like it spicy, add more red pepper flakes.

Soak wooden skewers in water for 30 minutes before grilling to prevent burning.

Serve with jasmine rice or a light cucumber salad for a complete meal.
