- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1/3 cup water
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In another bowl, mix sugar, oil, eggs, pumpkin puree, and water until smooth.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the loaf pan. Bake for 60-70 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- Store in an airtight container for up to 3 days.
- For extra flavor, add 1/2 cup chopped walnuts or chocolate chips.
