Ingredients

- 1 cup red lentils
- 4 cups water
- 1 small carrot, diced
- 1 small potato, diced
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Rinse lentils thoroughly.
- In a pot, heat olive oil and sauté carrots and potatoes for 2 minutes.
- Add lentils, water, turmeric, cumin, and salt.
- Bring to a boil, then simmer for 20 minutes until lentils are soft.
- Blend to a smooth consistency if needed.
- Serve warm.
