Description

A nutritious and delicious breakfast loaf packed with zucchini and carrots, perfect for toddlers.


Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix zucchini, carrots, flour, baking powder, cinnamon, and salt in a bowl.
  3. In another bowl, whisk honey, oil, egg, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the pan. Bake for 45-50 minutes.
