A hearty and flavorful soup made with white beans and classic Tuscan ingredients.
Ingredients

- 2 cups dried white beans, soaked overnight
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups water
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1 tsp dried rosemary
Instructions
- Drain and rinse the soaked white beans.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add beans, vegetable broth, water, salt, pepper, bay leaf, and rosemary.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the bay leaf before serving.
Notes
- Soak beans overnight for best results.
- Garnish with fresh parsley if desired.
- Store leftovers in the fridge for up to 3 days.
