- 2 ripe bananas
- 1/2 cup coconut sugar
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup dairy-free chocolate chips
Instructions
- Preheat oven to 350°F and line a baking dish with parchment paper.
- Mash bananas in a bowl, then mix in coconut sugar, melted coconut oil, and vanilla.
- Add flour, baking powder, and salt. Stir until combined.
- Fold in chocolate chips.
- Spread batter evenly into the prepared dish.
- Bake for 20-25 minutes or until edges turn golden.
- Let cool before slicing.
Notes
- Use very ripe bananas for sweetness.
- For nut-free blondies, omit chocolate chips or use vegan white chocolate.
- Store leftovers in an airtight container.
