Delicious vegan maple pecan bars with a crunchy crust and sweet maple filling.
Ingredients

- 1 1/2 cups rolled oats
- 1 cup pecans
- 1/4 cup maple syrup
- 3 tbsp coconut oil
- 1/4 tsp salt
- 1 cup dates, pitted
- 1/2 cup almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F.
- Blend oats, pecans, maple syrup, coconut oil, and salt in a food processor.
- Press mixture into a lined baking pan.
- Bake crust for 10 minutes.
- Blend dates, almond butter, maple syrup, and vanilla extract.
- Spread filling over baked crust.
- Chill for 2 hours before cutting.
Notes
- Store in fridge for up to 5 days.
- Use medjool dates for best texture.
