Description

Delicious vegan maple pecan bars with a crunchy crust and sweet maple filling.


Ingredients

Scale
  • 1 1/2 cups rolled oats
  • 1 cup pecans
  • 1/4 cup maple syrup
  • 3 tbsp coconut oil
  • 1/4 tsp salt
  • 1 cup dates, pitted
  • 1/2 cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Blend oats, pecans, maple syrup, coconut oil, and salt in a food processor.
  3. Press mixture into a lined baking pan.
  4. Bake crust for 10 minutes.
  5. Blend dates, almond butter, maple syrup, and vanilla extract.
  6. Spread filling over baked crust.
  7. Chill for 2 hours before cutting.
