Description

This warm blackberry cobbler is a cozy classic—bursting with juicy berries and topped with a golden, buttery crust. Serve it warm with ice cream for the ultimate treat.

Blackberry Filling

  • 5 cups blackberries (fresh or frozen)
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Topping

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 6 tablespoons unsalted butter (melted)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
  2. In a large bowl, mix blackberries, sugar, lemon juice, and cornstarch. Pour into the baking dish and spread evenly.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the egg and stir until crumbly.
  4. Sprinkle the topping evenly over the berries. Drizzle melted butter on top.
  5. Bake for 40–45 minutes, until the topping is golden and the filling is bubbling in the center.
  6. Let cool for 10–15 minutes before serving. Enjoy warm with vanilla ice cream.

Notes

You can use frozen berries without thawing. Feel free to swap in blueberries or raspberries, or add lemon zest to brighten the flavor.
