- 4 cups watermelon (cubed, seedless)
- 3/4 cup feta cheese (crumbled)
- 1/4 cup fresh mint leaves (chopped)
- 1/2 cup cucumber (thinly sliced, optional)
- 1/4 red onion (thinly sliced)
Dressing
- 2 tbsp olive oil
- 1 tbsp lime juice (freshly squeezed)
- salt (a pinch)
- black pepper (a pinch)
Instructions
- Cube the watermelon into bite-sized pieces. Thinly slice the red onion and cucumber (if using), crumble the feta, and chop the mint leaves.
- In a large mixing bowl, gently toss together the watermelon, cucumber, and red onion.
- Drizzle olive oil and lime juice over the salad. Sprinkle with salt and pepper.
- Add crumbled feta and chopped mint. Toss gently to combine without mashing the watermelon.
- Refrigerate for 10–15 minutes. Serve chilled.
Notes
This salad is best enjoyed fresh. Try adding a handful of arugula for extra bite or swapping lime with lemon for a different citrus twist.
