Ingredients

  • 4 cups watermelon (cubed, seedless)
  • 3/4 cup feta cheese (crumbled)
  • 1/4 cup fresh mint leaves (chopped)
  • 1/2 cup cucumber (thinly sliced, optional)
  • 1/4 red onion (thinly sliced)

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lime juice (freshly squeezed)
  • salt (a pinch)
  • black pepper (a pinch)

Instructions

  1. Cube the watermelon into bite-sized pieces. Thinly slice the red onion and cucumber (if using), crumble the feta, and chop the mint leaves.
  2. In a large mixing bowl, gently toss together the watermelon, cucumber, and red onion.
  3. Drizzle olive oil and lime juice over the salad. Sprinkle with salt and pepper.
  4. Add crumbled feta and chopped mint. Toss gently to combine without mashing the watermelon.
  5. Refrigerate for 10–15 minutes. Serve chilled.

Notes

This salad is best enjoyed fresh. Try adding a handful of arugula for extra bite or swapping lime with lemon for a different citrus twist.
