- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add diced chicken and cook until no longer pink.
- Stir in white beans, green chilies, chicken broth, cumin, oregano, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Top with shredded cheese and fresh cilantro before serving.
