- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1 tablespoon olive oil

- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water and drain.
- In a medium saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add wild rice, thyme, salt, and pepper. Stir to combine.
- Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 45-50 minutes until rice is tender.
- Stir in dried cranberries and chopped pecans. Cook for an additional 5 minutes.
- Fluff with a fork and serve warm.
