A flavorful wild rice pilaf with dried cranberries, perfect for a side dish or a light meal.
Ingredients

- 1 cup wild rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1 tbsp olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water.
- Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
- Add wild rice, thyme, salt, and pepper. Stir for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
- Stir in dried cranberries and pecans. Let sit covered for 5 minutes.
- Fluff with a fork before serving.
Notes
- Wild rice takes longer to cook than white or brown rice.
- For extra flavor, toast the pecans before adding.
- Substitute vegetable broth with chicken broth if preferred.
