- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 3 ripe bananas, mashed

- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and brown sugar. Beat in eggs one at a time. Stir in mashed bananas, yogurt, and vanilla extract.
- Gradually blend the dry ingredients into the banana mixture. Pour the batter into the prepared loaf pan.
- Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
- Use overripe bananas for the best flavor.
- You can substitute Greek yogurt for plain yogurt if desired.
