Description

This Zucchini Cheese Bake is a comforting dish featuring layers of tender zucchini, gooey melted cheese, and a hint of garlic. It’s simple, versatile, and perfect for sneaking in some veggies.


Ingredients

Scale

3 medium-sized zucchinis

Mozzarella cheese

Parmesan cheese

2 cloves of garlic, minced

Salt and pepper to taste

Optional: Cherry tomatoes, mushrooms, spinach, red pepper flakes, fresh basil or thyme


Instructions

1. Wash and slice zucchinis into thin rounds.

2. Preheat oven to 375°F (190°C).

3. Layer zucchini slices in a baking dish, sprinkle with mozzarella and Parmesan cheese.

4. Repeat layers, ending with cheese on top.

5. Bake for 25-30 minutes until cheese is bubbly and golden brown.

Notes

For a crispy top, broil for the last 2-3 minutes.

Let cool for a few minutes before serving.

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the oven at 350°F (175°C) for 10-15 minutes for best results.
