Chicken Scampi with Garlic Parmesan Rice 🍗🍚

This Chicken Scampi is buttery, garlicky, and full of bright lemon flavor, served over creamy Parmesan rice. It's comfort food that feels fancy — ready in 40 minutes!

Equipment

  • Medium saucepan with lid
  • Large skillet
  • Cutting board

  • Spatula or wooden spoon

Ingredients
  

  • 2 boneless skinless chicken breasts, sliced into thin strips
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1/4 cup fresh parsley chopped
  • 1 cup uncooked rice
  • 2 cups chicken broth for rice
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • In a medium saucepan, bring 2 cups of chicken broth to a boil. Add rice, cover, reduce heat, and simmer for 18–20 minutes until liquid is absorbed.
  • Stir in Parmesan cheese, season with salt and pepper, and set aside.
  • Meanwhile, season the chicken with salt and pepper.
  • In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes and sauté for 1 minute.
  • Add chicken and cook for 5–7 minutes, until golden and cooked through.
  • Pour in 1/2 cup broth and lemon juice. Simmer for 2–3 minutes.
  • Stir in fresh parsley.
  • Serve chicken and sauce over Parmesan rice. Enjoy!

Notes

Use chicken thighs instead of breasts if preferred.
Add lemon zest for extra brightness.
Stir in spinach, peas, or roasted veggies for a nutrition boost.
Store leftovers for up to 4 days in the fridge. Reheat with a splash of broth.
