This one-pan Garlic Parmesan Chicken & Potatoes recipe is the perfect comfort food. It's loaded with juicy chicken, golden potatoes, garlic butter, and melted cheese—easy to make and impossible to resist!
1.5lbsboneless skinless chicken breastscut into chunks
4Yukon Gold potatoesdiced into small cubes
3tbspolive oil
1tbspbutter
5clovesgarlicminced
1tspsmoked paprika
1tspItalian seasoning
Salt and pepperto taste
1.5cupsshredded mozzarella
0.5cupgrated Parmesan cheese
fresh parsleychopped, for garnish
Instructions
Preheat the oven to 400°F (200°C). Dice the chicken and potatoes into evenly sized pieces.
Heat 2 tablespoons of olive oil in a cast iron skillet over medium heat. Add chicken, paprika, Italian seasoning, salt and pepper. Sauté until lightly golden, about 5–6 minutes. Remove from skillet.
Add remaining olive oil and butter to the skillet. Add potatoes and cook for 10 minutes, stirring occasionally. Add minced garlic in the last 2 minutes.
Return chicken to the pan and stir to combine. Sprinkle shredded mozzarella and Parmesan cheese evenly on top.
Transfer skillet to oven and bake for 20–25 minutes, or until potatoes are fork-tender and cheese is melted and bubbly.
Garnish with chopped parsley and serve warm.
Notes
Try adding veggies like broccoli or bell peppers for extra color and nutrients. You can also swap mozzarella for provolone or cheddar for a different cheesy twist.
