Equipment

  • Blender or food processor
  • Fine mesh strainer or cheesecloth
  • Muddler or wooden spoon
  • Pitcher or large jar
  • Tall glasses for serving

Ingredients

  • 1 medium cucumber peeled and chopped
  • 1 cup cold water or coconut water
  • Juice of 1/2 lemon or lime
  • 5 –6 fresh basil leaves
  • 1 –2 tsp honey or maple syrup optional
  • Ice cubes for serving

Instructions

  • Add chopped cucumber and water to a blender and blend until smooth.
  • Strain the cucumber mixture through a fine mesh sieve or cheesecloth into a pitcher, pressing out as much juice as possible.
  • Muddle basil leaves in the pitcher to release their oils.
  • Add lemon or lime juice and sweetener (if using). Stir well.
  • Fill glasses with ice and pour the refresher over.
  • Garnish with extra basil or cucumber slices, if desired. Serve immediately.

Notes

Use coconut water instead of plain water for extra electrolytes and natural sweetness.
Mint can be used in place of basil for a different flavor profile.
The refresher can be stored in the fridge for up to 24 hours. Shake or stir before serving, as separation may occur.
For a fizzy version, replace some or all of the water with sparkling water just before serving.
No sweetener is necessary if your cucumber is naturally sweet and juicy.
