Peach and Apricot Spritzer
This light and bubbly Peach and Apricot Spritzer is the ultimate summer drink. Made with fresh fruit, a splash of citrus, and sparkling water (or prosecco!), it's naturally sweet, endlessly refreshing, and perfect for warm afternoons or festive gatherings.
- 2 ripe peaches peeled and sliced
- 3 ripe apricots halved and pitted
- 1 tablespoon honey or agave syrup optional
- Juice of ½ lemon
- 1 ½ cups sparkling water or prosecco
- Ice cubes
- Fresh mint leaves for garnish
Blend the fruit: In a blender or food processor, combine the peaches, apricots, lemon juice, and honey or agave. Blend until smooth.
Strain (optional): For a smoother texture, pour the mixture through a fine mesh strainer into a pitcher.
Add bubbles: Stir in the sparkling water or prosecco gently.
Serve: Fill glasses with ice and pour the spritzer over the top. Garnish with fresh mint leaves or a peach slice.
Adjust sweetness based on how ripe your fruit is — the riper, the sweeter!
Swap in nectarines or plums if peaches/apricots aren’t available.
Add a splash of vodka, gin, or white wine for an adult version.
The fruit puree can be made up to 2 days in advance and stored in the fridge — just add bubbles when serving.
