Instructions
In a mixing bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract (if using).
Whisk together thoroughly to avoid clumping. Let sit for 5 minutes, then whisk again.
Cover and refrigerate for at least 2 hours or overnight until it reaches a thick, pudding-like consistency.

Notes
You can blend the pudding before chilling for a smoother texture, or leave the chia seeds whole for a classic feel.
