Main Ingredients

  • 4 boneless, skinless chicken breasts about 1 pound
  • 2 ripe peaches sliced
  • 1/2 cup basil pesto homemade or store-bought
  • 2 tbsp olive oil extra virgin
  • 1/4 cup chicken broth
  • salt and pepper to taste
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced

Instructions
 

  • Pat the chicken dry and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4–5 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, reduce heat to medium and sauté minced garlic for 30 seconds.
  • Pour in chicken broth and scrape any browned bits from the bottom.
  • Add sliced peaches and cook for 2–3 minutes until slightly softened.
  • Return chicken to the pan, spoon pesto over each breast, cover, and simmer for 5–7 minutes on low heat until chicken is cooked through.
  • Finish with a drizzle of lemon juice before serving.

Notes

Use ripe, seasonal peaches for best results. This dish pairs wonderfully with a side of couscous or grilled bread.
