Tomato Peach Burrata Salad

Main Ingredients

  • 2 heirloom tomatoes sliced into wedges
  • 2 ripe peaches thinly sliced
  • 2 balls burrata cheese about 4 oz each
  • 1/4 cup fresh basil leaves torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze optional
  • sea salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • Slice heirloom tomatoes into thick wedges and peaches into thin slices. Arrange them on a serving plate or platter.
  • Place the burrata balls on top. Tear them open slightly to reveal the creamy center, if desired.
  • Sprinkle torn fresh basil leaves across the top of the salad.
  • Drizzle with olive oil and balsamic glaze (if using). Season with sea salt and freshly ground black pepper to taste.
  • Serve immediately at room temperature. Best enjoyed fresh with crusty bread on the side.

Notes

This salad is perfect for showcasing seasonal summer produce. For extra crunch, add toasted pine nuts or walnuts. To make it heartier, serve over arugula or mixed greens.
