Ingredients
  

Salad

  • 4 cups watermelon cubed, seedless
  • 3/4 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 1/2 cup cucumber thinly sliced, optional
  • 1/4 red onion thinly sliced

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lime juice freshly squeezed
  • salt a pinch
  • black pepper a pinch

Instructions
 

  • Cube the watermelon into bite-sized pieces. Thinly slice the red onion and cucumber (if using), crumble the feta, and chop the mint leaves.
  • In a large mixing bowl, gently toss together the watermelon, cucumber, and red onion.
  • Drizzle olive oil and lime juice over the salad. Sprinkle with salt and pepper.
  • Add crumbled feta and chopped mint. Toss gently to combine without mashing the watermelon.
  • Refrigerate for 10–15 minutes. Serve chilled.

Notes

This salad is best enjoyed fresh. Try adding a handful of arugula for extra bite or swapping lime with lemon for a different citrus twist.
